Tomatillo Guac

This was so good, and really just a matter of adding salsa verde to avocado. But it really created a nice complexity – guac with a kick!

about 8-10 tomatillos, husked

3 cloves garlic, unpeeled

4 jalapeƱos, seeded

1 onion, cut in half

about 1/2 cup cilantro

4 avocados

salt

Broil tomatillos, about 5 minutes per side.

In a cast iron pan, add onion, garlic and peppers. Roast about 10-15 minutes, turning.

Combine roasted ingredients in a food processor. Add salt and cilantro. Taste and adjust seasonings as needed.

Take 1 cup tomatillo salsa (save the rest for another use) and mash with 4 avocados. Season with salt and serve.
