Spinach and Mushroom Quesadillas

I helped Becky cater her sister’s wedding shower on Saturday. This was the vegetarian main – really good and simple.

16 oz cremini mushrooms, sliced

1 package spinach

sherry

12 flour tortillas

8 oz shredded monteray jack or fontina

3 oz goat cheese

cooking spray

olive oil

Heat 2 tsp of olive oil in pan. Sautee mushrooms with a little sherry. Set aside.

Wilt spinach with a bit more sherry. Set aside.

Spray grill or cast iron skillet with cooking spray. Put down a tortilla. Add spinach, mushrooms, and both types of cheese and put another tortilla on top.

Cook until tortillas are charred and cheese is melted. Cut into four pieces and serve.
