Alsatian Tomato Salad

This one was pretty time consuming (particularly the dressing) but tasty. Priya did all the work!

4 heirloom tomatoes

1 head of Bibb lettue

pinch sugar

salt and pepper

4 tbsp chopped onions

4 tsp chopped scallions

2 tsp fresh parsley

2 tsp fresh basil

a bit of red wine vinegar

4 tbsp vinaigrette (see below)

Make a bed of lettuce on a platter. Fan tomatoes out over lettuce.

Season tomatoes with salt, pepper and sugar. Top with onion, scallion, basil and parsley. Season with about 4 tsbp vinaigrette and a bit of red wine vinegar and serve.

Vinaigrette

1.5 cups oil

1/4 cup red wine vinegar

1/4 cup tarragon vinegar

2 tsp onion

1 tsp shallots (optional)

1/4 tsp garlic

2 tsp Dijon mustard

1 tsp dry mustard

1/2 tsp Worcestershire sauce

2 drops Sriracha

a bit of chopped fresh tarragon

salt and pepper

Whisk ingredients together (Except oil). Gradually beat in oil.
