Cherry Clafouti

This dessert is really easy. I’m not huge on the texture of it (it’s sort of pie meets pudding) but others enjoyed it.

1 cup flour

1/2 tsp salt

1 cup sugar

2 cups milk

3 eggs

1 pound cherries

1 cup heavy cream

2 tbsp sugar

Combine flour, salt and sugar in a large bowl. Stir with a whisk. In another bowl, whisk the eggs and then beat into the batter until smooth. Refrigerate at least two hours.

Pout cherries in a nice pie dish. Preheat oven to 325 degrees.

Pour batter over cherries. Cook for 1 hour to 1 hours and 15 minutes, until it is set but a bit jiggly in the middle.

Make whipped cream in mixer by whipping cream and sugar together.

Spoon clafouti into dishes with whipped cream.
