Loved this recipe from Smitten Kitchen (lots of successes from this blog lately). It’s a really interesting texture, and a great option for Meatless Monday. I ended up using way too much broccoli because I remembered the recipe amount wrong, and it still worked great (extra sauce for dipping bread in). I like sprinkling with even more red pepper flakes before serving.

Sorry I haven’t posted much, oh three readers – I’m in the process of changing jobs and life has been pretty hectic.
Anyway, here’s a super easy beef barley soup from my Polish cookbook.
I made what I’d say was a pretty killer steak salad, using the beef from the 1/16 cow we purchased last month. I wanted to make a homemade bleu cheese dressing that wasn’t too unhealthy. I’d made one before but silken tofu just isn’t an ingredient I ever buy, so wanted to try another route. This came together well. Add the buttermilk a little at a time; mine came out a little thin because I overestimated how much I’d need of it.
I was slightly skeptical of this curry recipe (was worried it’d be too sweet) but it actually came together nicely. I took a commenter’s suggestion of adding a 1/2 cup coconut milk which made it more saucy and brought the flavors together well.
My plan was to serve this with quinoa but we were out of it so I went with couscous. It wasn’t the best pairing – the couscous really sopped up the sauce to almost make it disappear. Rice would be fine.
Easy crock-pot friendly recipe. I made in the oven and transferred to the crock pot to keep warm but I bet you could do them in the crockpot completely instead of baking.
