Swedish Meatballs

Easy crock-pot friendly recipe. I made in the oven and transferred to the crock pot to keep warm but I bet you could do them in the crockpot completely instead of baking.

 

2 cans cream of mushroom soup

8 oz mushrooms

1 onion, sliced

1 cup beef broth

3 pounds ground beef

1.5 lemons

1 cup milk

a bit of grated nutmeg

1.5 onions

4 slices white bread, crusts removed

salt and pepper

a bit of dried parsley

2 eggs

a bit of oil

In a food processor, combine milk, nutmeg, onions, white bread, parsley, salt and pepper and egg and mix until smooth. Squeeze lemon juice over ground meat. Combine bread mixture with ground meat and form into meatballs.

Brown meatballs on all sides in oil. Put into casserole dish.

In pan, add sliced onion, mushrooms, cream of mushroom soup and beef broth and cook until gravy-like. Pour over meatballs.

Preheat oven to 350. Bake meatballs about 45 minutes and serve.
