Beef and Barley Soup with Vegetables

Sorry I haven’t posted much, oh three readers – I’m in the process of changing jobs and life has been pretty hectic.

Anyway, here’s a super easy beef barley soup from my Polish cookbook.

8 cups beef stock

2 raw potatoes, cubed (I used purple fingerlings and tried to use the equivalent amount of what two russets would be)

2 carrots, peeled and minced

1 cup pearl barley

3 tbsp butter

about 1 cup chopped beef or 1/2 cup chopped mushrooms

chopped parsley, for garnish

sour cream, for garnish

salt to taste

Soak barley in water overnight and drain.

Add beef stock, potatoes, carrots, barley, butter and beef to pot. Bring to a boil. Simmer until ingredients are tender (I did at least 45 minutes). Adjust seasoning. Garnish with sour cream and parsley.
