Spicy Ale Shrimp

Basically, a more involved take on shrimp cocktail.

3 bottles pilsner beer

1 tbsp seafood seasoning

1 tsp mustard seeds

1 tsp red pepper flakes

1 lemon, quartered

1 pound large raw shrimp

For dipping sauce:

1 cup ketchup

1 tbsp chili garlic paste, or sriracha

1 tbsp (or more) fresh horseradish

juice of 1 lime

Combine cocktail sauce ingredients and let stand/chill.

Place 2 bottles beer, seafood seasoning, mustard seeds and pepper flakes in a large stockpot. Juice lemon in pot and add quarters. Bring to a boil.

Pour remaining beer into a bowl filled with ice and set aside.

Add shrimp to beer mixture and cook about 3 minutes or until cooked through. Drain and add to ice beer bowl to coo. Remove from bowl and serve with sauce.
