Something different for Meatless Monday. Not a perfect recipe, and it doesn’t make a ton, but a tasty meal.
3/4 cup split red lentils, washed and drained
5 oz spinach, cut into strips
2 tbsp sunflower or vegetable oil
2 garlic cloves, crushed
1 tsp turmeric
1 tsp chili powder
2 tsp lemon juice
Cover lentils with 1 and 1/4 cup hot water. Bring to a boil and simmer until mushy (I think this took maybe 20 minutes). Add more water if they dry out. They turn yellow when done.
Sweat spinach for a few minutes in another pan.
Heat oil in pan. Add garlic until golden. Toast spices.
Mix all ingredients together. Add lemon juice and season with salt.
