Very basic chicken curry recipe. Not a ton of ingredients, either.
5 chicken breast (or halves)
2 onions, chopped
2 cloves of garlic, minced
1 can of coconut milk (light is fine)
curry powder, to taste (I used it until there was a kick and a change of color to the sauce)
1/2 bunch of coriander, chopped
3-4 tbsp olive oil
salt and pepper
Fry onions 2 tbsp oil and remove from pan. In same pan, fry chicken breasts on both sides (add more oil if needed). Add a bit more oil and fry up garlic and onions with chicken.
Pour coconut milk into skillet. Add curry and season with salt and pepper. Add a glass of water.
Cook 30 minutes on medium, covered. Remove lid and cook another 30 minutes on low.
Stir in coriander, check seasonings and serve over rice or noodles.
