Broccoli Cheese Soup

I was really pleased with how this turned out. I used this recipe as a guide but made some changes.

1 3/4 cups chicken broth
1 small onion, diced finely
1/3 cup all-purpose flour
3 tbsp butter
salt and pepper
2 cups whole milk
1 1/2 cup shredded cheddar cheese, preferably sharp or extra sharp
1/2 cup shredded Swiss cheese
2 large heads broccoli, florets only

Steam broccoli (I did mine in the microwave covered in saran wrap for about six minutes). Set aside.

Simmer onion in broth for 15 minutes. While that’s happening, heat butter in stock pot. Add flour and cook about two minutes. Add milk and cook another two minutes, whisking constantly.

When onions are done, add to milk mixture. Stir and cook about six minutes. Stir in cheese and blend completely. Season to taste.

Add half of broccoli to soup. Puree with stick blender. Stir in remaining broccoli. Heat through and serve.

This would also be good garnished with a little red pepper or crumbled bacon.
