One of those barely-a-recipe ideas, but this came to me as a way to shake up our breakfast routine a little. Super easy.
1 can Goya black bean soup (you’ll have some left over)
2 tbsp prepared or homemade salsa
2 tbsp chopped cilantro
In a small sauce pan, heat up soup. Spray pan with cooking spray.
Fry two eggs to desired consistently.
To serve, top 1/2 cup black bean soup with 1 fried egg, 1 tbsp salsa and 1 tbsp chopped cilantro. Only 3 Weight Watchers points.
