Easy Asian Slaw

You could do this with any raw-friendly veggies you have around, I bet. Jen’s version had radishes.

large handful snow peas, cut into strips

2 scallions, sliced

1 shallot, minced

large handful carrots, chopped

1 tsp rice vinegar

1 tsp sesame oil

salt and pepper

Toss raw veggies with dressing and serve.
