Recipe Variation: Veggie Stackers with Goat Cheese

This is essentially this sandwich recipe without the bread. Stack the grilled veggies with goat cheese every few layers, put the stackers on top of arugula, and pour dressing on top. Served with chickpeas stewed with broccoli rabe.
