Simple weekend breakfast. Something a little different.
1/4 cup edamame, thawed
8 oz ground turkey
2 scallions, chopped
handful cilantro, chopped
1 tsp sesame oil, plus cooking spray
five spice powder
Beat eggs with soy sauce and fish sauce. Preheat broiler.
Heat pan with sesame oil and cooking spray. Cook turkey, seasoned with salt, pepper and five spice powder, until done.
Remove turkey from pan and wipe clean. Heat with more spray and pour in eggs. When starting to set, add toppings.
When everything is almost set but jiggly on top, throw frittata in oven to brown on top. Cut into slices and serve.
