Buffalo Chicken Salad

This is one of those dinners I really can’t believe I haven’t made before, just because it’s so intuitive. And because I love buffalo wings.

1 lb chicken breast

hot sauce

about 1 tbsp melted butter

crumbled bleu cheese or Gorgonzola

1-2 heads romaine, chopped

3 ribs celery, chopped

3 carrots, peeled and chopped

3 scallions, chopped

light bleu cheese dressing (homemade is great; I’ve also found one I like from Whole Foods that is yogurt based)

croutons, preferably homemade

Marinade chicken in melted butter and 1-2 tbsp hot sauce for at least an hour. Remove from marinade (reserve marinade) and season with salt and pepper.

Heat a cast iron skillet; spray with cooking spray. Cook chicken in pan until cooked through. Prep remaining ingredients while it’s cooking.

Cut chicken into cubes. Throw back in pan with marinade and toss so it’s coated and marinade is heated through. The food safety conscious will bring the marinade to a boil while the chicken is cooking initially.

Build salad with veggies, lettuce, dressing, handful cheese, chicken, croutons and extra hot sauce.
