Panko Asparagus

Just trying to think of a way to shake up a side dish (we had this with crab cakes).

1 bunch asparagus, trimmed

panko bread crumbs

zest of one lemon

juice of half a lemon

salt and pepper

1 tbsp butter

1 tbsp parsley

Melt butter in pan. Sautee bread crumbs briefly until browned. Add parsley and zest and remove from pan.

Spray pan with cooking spray. Cook asparagus until done, seasoned with salt and pepper. As you’re cooking, squeeze lemon juice on top of asparagus.

Top asparagus with bread crumbs.
