Salad with Spicy Chicken, Feta, Asparagus and Corn

Another example of making lunch out of spicy chicken thighs. I like to think I have a way with salads, and this was a satisfying one.

1 spicy chicken thigh

1/2 to 1 oz crumbled feta

1 radish, sliced

sliced cucumbers

3 grape tomatoes, halved

2 cups romaine lettuce, chopped

1-2 tbsp cider vinagrette (I just combined oil, cider vinegar, salt and pepper)

5 asparagus spears

handful of frozen corn, defrosted

cooking spray

Heat pan and spray with cooking spray. Add asparagus and corn and cook until asparagus is tender and corn is a bit charred. Remove veggies from pan and reheat chicken in pan.

Combine ingredients. Toss with dressing and serve.
