Turkey Paillards with Thyme

I was trying to think of a way to showcase Becky’s Awesome Quinoa, so this super simple approach to turkey came to mind. This whole meal, which was very healthy and filling, came together really well. Pictured with a radish turnip stir fry (recipe to follow).


1 pound turkey cutlets or tenderloins

salt and pepper

flour for dusting (maybe 1/2 cup?)

chopped lemon thyme (about 2 tbsp)

lemon slices, for squeezing

1/2 tbsp butter

1/2 tbsp olive oil

cooking spray

Pound turkey until thin. Season turkey with salt and pepper. Combine flour with about half the thyme. Dredge turkey in flour on both sides, shaking off excess.

Heat pan. Add oil and butter; spray with cooking spray. Cook cutlets on both sides until browned and cooked through. Garnish with remaining thyme, and serve with lemon slices, ideally atop Becky’s Quinoa.
