I’ve never had this dish before, but I’ve heard about it as an Italian thing, and from Kevin and Jess. This wasn’t so much an authentic recipe as a way to use up leftover meat sauce for breakfast.
about 1/2 cup leftover spaghetti sauce with ground meat
splash of whole milk
salt and pepper
Spray pan with cooking spray. Add sauce and milk to pan and stir together. Crack two eggs into sauce. Cover and cook until whites are set (I think my yolks ended up a bit overdone, but it worked fine here). Season with salt and pepper – we had this with mini garlic toasts.
