We always get a ton of garlic scapes in our CSA each year. Pesto’s a good way to use them up, and I also saw a website that used the tougher, straight ends as kabob skewers. I employed both techniques in this basic recipe.
About 3 tbsp garlic scape pesto (this time I used more scapes and did not add arugula)
several tough ends of scapes, to use as skewers
About 1 pound chicken (2 breasts), cut into cubes
1 onion, cut into large slices
3 squashes, cut into large disks
salt and pepper
Marinate chicken, onion and zucchini in pesto overnight.
Preheat grill. Thread meat and veggies threw skewers (I had to use regular skewers for the onion instead of the scapes). Season with salt and pepper.
Cook for about 5 minutes per side or until chicken is cooked through and veggies are tender. Thread veggies and chicken separately in case they take different times to cook.
