Broiled Pork Chops with Ginger and Sage

This was a nice pork chop marinade from the Pig cookbook my sister bought me awhile back. We don’t really make pork chops often enough and these were nice ones brought back from Amish country. I paired this with some leftover roasted red pepper sauce, but wouldn’t necessarily recommend it – the flavors clashed a bit. Just stick with the marinade.

1/3 cup apple juice

1 tbsp fresh lemon juice

2 tbsp soy sauce

1 tbsp oil

2 tsp fresh ginger

1 garlic clove, minced

1 tbsp fresh sage (I used pineapple sage)

salt and pepper

4 pork shops, at least 1 inch thick.

Combine all ingredients up to sage and make into a marinade. Marinade for at least an hour (we did closer to four).

Broil about five inches from heat – about 8 minutes per side. Serve hot.
