White Pizza with Broccoli Rabe, Peppers and Mushrooms

I had pizza night with my sister and brother-in-law. We made pepperoni, white, margherita and this tasty vegetarian one. The broccoli rabe really makes it.

1/2 ball of basic pizza dough

1 bunch broccoli rabe or broccolini (you’ll have some extra)

2-3 cloves garlic

olive oil

2-3 mushrooms, sliced

1/2 red pepper, sliced

1/2 green pepper, sliced

1/2 small onion, sliced

shredded mozzarella cheese (less than 8 oz)

shredded parmesan

Preheat oven to 500, with baking sheet inside (or pizza stone).

While oven is preheating, sautee broccoli rabe with garlic and red pepper flakes until just tender (wash rabe and leave some water clinging to the veggie – it helps steam it a little and make it less bitter). Remove from pan and wipe. Sautee onions, mushrooms and pepper until just tender.

Roll out pizza dough. Drizzle on some olive oil. Top with veggies. Top with mozzarella. Grate a little parmesan on.

Cook 15 minutes or until crust is crispy and cheese is melted. Allow to sit 5 minutes before slicing.

Tip: Use extra broccoli rabe for pork sandwiches. I actually just had some leftover rabe from making said sandwiches earlier in the week, which is why I threw it on the pizza.
