Mom’s Meat Stuffing

This is one of those Thanksgiving classics that was always on our dinner table growing up. As a kid, I would inhale the meat stuffing and ignore the bread stuffing. As an adult, I’m much more addicted to the bread-y stuff (or even better, bread stuffing with sausage), but this still brings back memories. I threw it together for my mom this year while she was working on other dishes, so the recipe’s fresh in my mind. It’s an easy one.

1-2 onions, chopped

2 cup white rice

3-4 ribs celery, chopped

1-2 tbsp butter

2 pounds meatloaf mix

salt and pepper

1 egg

1 package cremini mushrooms, chopped

Preheat oven to 350.

Melt 1 tbsp butter in pan. Cook celery and onion until soft (season with salt and pepper). Remove and transfer into a casserole. Repeat with mushrooms. Brown beef in two batches (season with salt and pepper), reserving the juices from the second batch – add to onion mixture. Check seasonings. Beat in an egg and add it to stuffing mixture. Bake for 30 minutes and serve hot.
