Hash Brown Casserole

Truth be told, I’m not much of a hash brown casserole person. But John and I ended up making Christmas breakfast kind of unexpectedly, and his mom had bought packages of hash browns for such a purpose. I whipped one up based on the package instructions, and it turned out pretty well.

4 tbsp melted butter

1 package hash browns

3/4 cup sour cream

1 can cream of chicken or cream of mushroom soup

1/4 cup chopped onion

2 cups cheddar cheese

For topping:

1.5 cups corn flakes (I subbed Special K), mixed with 2 tbsp melted butter.

Preheat oven to 350. Combine all hash brown casserole ingredients (except topping) in a bowl. Spread into a 9 by 13 baking dish, greased (I used two 9×9 pans because I couldn’t find one). Top with topping. Cook for 45 minutes and serve.
