Recipe Variation: Black Eyed Peas with Fresh Kielbasa

I love my pink-eyed peas recipe, but the fresh peas can be hard to find at the Farmer’s Market regularly. I decided to try the recipe with dried black eyed peas, and a few other changes. Turned out really well! The changes:

*Used two links fresh kielbasa rather than the grocery store stuff

*Used about 3/4 a bag of dried black eyed peas (soaked them for a couple hours) instead of the pink-eyed peas, and a bit more broth to just cover the mixture.

*Omitted the jalapeno, since my husband’s stomach was upset, and added some chopped bell pepper

*Simmered for about 70 minutes, mashing up some of the peas near the end and turning it up to high for about 5 minutes.

*Used Cajun seasoning instead of smoked paprika (no real reason; I wasn’t looking at the old recipe closely when I made it).

Delicious.
