Thai Herb Salad (with Shrimp Patties)

I had a ton of random herbs in my fridge, so some sort of Thai herb salad seemed like a good idea. Had some shrimp in the freezer, but instead of throwing them in, decided to make shrimp burger patties and put them on top of the salad. Great combo!

4 shrimp burger patties (I threw a little basil into this batch)

1-2 small heads romaine, chopped

1/2 bunch basil, chopped

1/2 bunch mint, chopped

1/2 small bunch cilantro, chopped

about 2 tbsp chives, chopped (optional: you could also probably use scallions)

1 shallot, sliced thin

2 tbsp peanuts, crushed

1/2 a long English cucumber, sliced

For the dressing:

sesame oil

lime juice

rice vinegar

fish sauce

pinch sugar

1 thai red chile, chopped

(I didn’t measure the exact ratios for the dressing, but it was about 1 parts oil to 1 parts acid, plus a generous splash of fish sauce)

Whisk dressing ingredients together. Mix together peanuts, herbs, lettuce, cucumber and onion. Toss dressing with greens. Serve with shrimp patties. Serves 4 (with plenty of greens).
