Baked Sweet Potato Chips

This is the first time I’ve used a mandoline (I’m kind of afraid of them), so yay for that? Keep an eye on these – mine got a little toasty.


3-4 sweet potatoes, halved (you can peel them if you want)

cooking spray


Preheat oven to 300.

With a mandoline, slice chips thin (I used the second lowest setting). Store in water as you go. Dry thoroughly (I used a salad spinner).

Coat cooking sheets with cooking spray. Add chips in a single layer. Spray with additional spray and season with salt.

Bake 30-40 minutes or until cooked through (keep an eye on them).
