Open-Faced Egg Sandwiches with Tomato and Turkey Bacon

I often struggle to think of weekend breakfast ideas that are a little decadent, but still Weight Watchers-friendly. This is what I came up with this weekend.

eggsandwich

1 English muffin

2 eggs

cooking spray

2 slices turkey bacon

1 slice American cheese

sliced tomato

salt and pepper

Toast English muffins – put half on each plate. Add half a slice of Cheese to each (it’ll melt a little from the heat of the muffin).

Fry up two eggs in a skillet; cook turkey bacon while doing so. I fry for about a minute on each side.

Top bacon and tomato slices over cheese. Add egg on top. Eat with a knife and fork.
