I’ve got a big batch of this ready for tomorrow, when Mostly Meatless March ends.

This was an impromptu dish that came together well. I should have done a better job chopping the herbs finely but eh.
These turned out quite nicely (and weren’t bad tucked into a bun for veggie burgers the next day). I served the mushroom steaks with hassleback potatoes (still don’t feel like I’ve perfected those yet) and asparagus.
These were so good. And probably at least partially responsible for my less than stellar weigh-in this morning.
John is definitely the one to make grilled cheese in our household. I tend to burn them, or try to make them pseudo-healthy, etc. He just has it down, and he isn’t afraid to experiment with whatever cheese we happened to have in the house. This is more of a guide than a formal recipe.
Not a recipe, really, but adding shrimp and quinoa to a basic Caesar salad makes for a nice variation.
Massaman curry is becoming the default curry in our household, basically because we have a giant tub of curry paste we’re trying to use up. John and I have both made our own version: here’s one I did that was MMM-friendly.
