I had to rethink dinner plans after messing up a recipe, and for some reason nothing sounded good. I flipped through one of my Vietnamese cookbooks and stumbled on this. Very easy and turned out quite well.
2 tbsp vegetable oil
2 tbsp chopped garlic
1/2 cup chopped onion
1 pound shrimp, thawed and peeled
4 tbsp fish sauce
2 tbsp brown sugar
red pepper flakes, to taste
1/2 cup water
2 tbsp green onions (I used half Chinese chives)
2 tbsp cilantro (I used mint because we were out).
Heat oil in pan. Sautee garlic and onion briefly. Add shrimp and cook until just pink. Stir in fish sauce, sugar and chili flakes. Add water. Cook about 2-3 minutes. If sauce isn’t thick enough, you can thicken with a little corn starch. Garnish with onions and cilantro. We served this as a noodle bowl with rice noodles and crushed cashews.
