John wasn’t super hot on the pickled ramps, but I thought they helped cut through the richness of the fish we served this with.
1 bag baby spinach
splash or two chicken or vegetable broth
juice from half a lemon
1-2 tbsp pickled ramps
salt and pepper
Heat pan; spray with cooking spray. Add spinach and a little broth to help wilt it. When spinach is almost wilted, stir in ramps and heat through. Garnish with lemon juice and season with salt and pepper.
