I’ve always heard “real” Greek salads don’t have lettuce. So I went that route for last night’s dinner side. I still added a little red wine vinegar, but you can leave that off, or just add a squeeze of lemon juice.
4 cherry tomatoes (mine were on the larger side), halved
1 red pepper, chopped
1 green pepper, chopped
1 cucumber, chopped
1/2 red onion, chopped
kalamata olives (maybe 1/2 cup), pitted
salt and pepper
red wine vinegar or lemon juice (optional)
Toss together all ingredients. Top with a little vinegar or lemon juice, if desired.
