Recipe Variation: Quinoa Stuffed Pepper Casserole

This is a lower-carb variation on my inside out stuffed peppers.

1 package ground turkey

1 onion, chopped

2 cloves garlic, minced

3 slices bacon

1 8 oz package mushrooms, sliced

about 1 can or so tomato sauce

1 cup cooked quinoa

2 green peppers, chopped

2 red peppers, chopped

salt and pepper

olive oil

Preheat oven to 350.

Cook bacon until crisp. Crumble and remove all but 1 tbsp bacon fat from pan.

Sautee onion, garlic and mushrooms until soft. Add to 9 X 13 casserole dish.

Brown turkey in pan (season with salt and pepper). Add to dish.

Toss browned meat and vegetables with peppers, quinoa, bacon and tomato sauce. Season as needed.

Bake for 40 minutes. This also can be frozen as a casserole and reheated.
