Curry Rice with Chickpeas, Turkey and Chard

Threw this together with random leftovers when we returned from out of town this weekend. Just an Indian spin on fried rice, basically.

2 cups cooked white rice

1 tbsp coconut oil

1 onion, chopped

2 cloves garlic, chopped

4 oz ground turkey

Curry powder

2 cups Swiss chard, chopped

1/2 cup canned chickpeas

1-2 tbsp coconut cream

splash or two soy sauce

1 tbsp chopped cilantro

Heat oil in pan. Sautee onion and garlic for a minute. Add ground turkey (season with salt and curry powder) and brown. When browned, add rice, coconut cream,  soy sauce and chard and sautee until rice is warm and soft and chard is wilted. Add a bit more curry powder and season to taste with salt. Garnish with cilantro.
