So. Much. Chard. In the CSA lately. I wasn’t sure how well this sturdy green would work here, but since Kale Caesars have been so big lately, I figured a chard one probably wouldn’t be much different. And it worked well! I recommend letting the greens sit in the dressing for about an hour before serving.
About 4-5 cups chard, cut into thin ribbons
parmesan cheese, grated (between 1/4 and 1/2 cup, plus more for the dressing)
two handfuls croutons (I prefer homemade)
4-5 tablespoons Caesar dressing (see below)
For the dressing:
about two tbsp grated parmesan
2 anchovies, chopped
1 egg yolk
salt and pepper
squeeze lemon juice
2:1 ratio olive oil and sherry vinegar (probably used a few tablespoons of each)
Toss chard with dressing and cheese. Allow to sit about an hour. Serve topped with croutons.
