Lemongrass Chicken Banh Mi

I made three types of banh mi for our recent DC-versary BBQ (I’ll post the menu later) and this one was a particular hit. Super easy marinade, and works really well in the banh mi. You could also have this chicken plain or with noodles (I threw some into leftover lo mein for dinner tonight).

For the chicken

6 chicken breasts, sliced

3 stalks lemongrass, chopped (soft parts)

3 garlic cloves, crushed

fish sauce

soy sauce

1-2 tbsp ginger

For the banh mi

Baguettes, cut into fifth

quick pickled carrots (carrots soaked in rice vinegar, salt and sugar)

chopped cilantro

chopped jalapeno

sliced cucumbers

mayo, fish sauce and Sriracha for serving

Marinade chicken overnight in remaining ingredients.

Grill chicken on both sides until cooked through. Serve in a sandwich topped with banh mi toppings.
