Leftover Steak Burritos

Just a good reminder when life gives you leftovers (in our case, rice from Fajita Night and a little bit of steak from Medium Rare, a steak frites place), make burritos.

About six slices leftover hanger steak

2 flour tortillas

about 1/2 cup leftover rice (ours was white seasoned with a little onion and cumin)

1/2 cup Trader Joe’s refried black beans

2-3 tbsp shredded cheddar

Microwave beans and rice until warm (about two minutes). Microwave steak for about 45 seconds. Wet two paper towels, wrap burritos, and microwave 30 seconds.

Spread half bean mixture onto each tortilla. Pile upper half of tortilla with half the steak, half the rice and half the cheese. Roll up and serve. Makes two.
