Thai Steak Salad

This is a great way to use up leftover steak (if you manage to have any).

4 oz leftover steak (in our case, buffalo skirt), sliced thin

3/4 cup chopped lettuce

1/2 cucumber, sliced

1 chile, sliced thin

1 tbsp chopped cilantro

1 tbsp chopped mint 

1 tbsp chopped basil

1/2 red onion, sliced (if you have one)

juice of 1/2 lime

1-2 tbsp fish sauce

1-2 tbsp rice vinegar

pinch sugar

Mix steak with chile, lime juice, fish sauce, rice vinegar and sugar. Toss with remaining ingredients.
