Tuna Rice Bowl

This dish was more about assembling little mini-dishes, but it turned out so nicely that I wanted to post it regardless.

1 pound tuna, prepared this style

2 cups steamed broccoli

2 cups ginger fried rice (see below)

2 cups spicy zucchini (see below)

Slice tuna thin. Assemble bowls by including 1/2 cup fried rice, 4 slices spicy zucchini, 1/4 of the tuna and 1/2 cup steamed broccoli.

Ginger fried rice

about 2 cups leftover white rice

1 onion, chopped

2 cloves garlic, chopped

1 tbsp ginger paste

2 eggs, beaten

a couple splashes fish sauce

1-2 tbsp chopped cilantro

1 tbsp coconut oil

Heat oil in pan. Add onion and garlic and sautee. Add ginger and sautee another minute.

Add rice, along with a few splashes soy sauce. Cook until soften and heated through.

Push rice to side, and scramble two eggs in the same pan. Incorporate in fried rice. Stir in cilantro and serve.

Spicy Zucchini

1 zucchini, sliced into rounds

1 tbsp broad bean paste

1 tbsp coconut oil

a couple splashes fish sauce

Heat oil in pan. Sautee zucchini with spicy paste until zucchini is cooked through. Flavor with additional fish sauce.
