This was a nice weekend breakfast.
2 slices Italian bread (or 4 tiny slices – I used rosemary Italian)
4 tbsp shredded mozzarella (approximately)
2 servings cacciatore peppers, plus a little extra tomato sauce if needed
Preheat broiler. Spray bread with cooking spray – top with 1-2 tbsp per piece of toast. Broil for 5 minutes or until cheese is browned and bread is toasty.
While bread is toasting, heat cacciatore peppers in a pan. While they’re warming up, fry two eggs (I did mine sunny-side up).
Top bread with an egg and peppers.
