Soooo many hot peppers in the CSA. So hot sauce was necessary. I used the same recipe my friend Heather uses for her Rocket Fuel hot sauce, but with different peppers.
20 assorted peppers (I mostly used jalapenos and serranos, but there were a few random ones thrown in there)
1/2 cup white vinegar
3 cloves garlic, chopped
1/2 cup chopped onion
1 tbsp sugar
2 cups water
1-2 tsp salt
1 tbsp olive oil
Sautee peppers, onion and garlic in oil for a few minutes (season with salt). Add water and simmer for 20 minutes. Allow to cool.
Combine in food processor – add vinegar slowly while blending. Bottle.
