Smoky Two-Bean Soup with Chicken and Greens

I whipped this up in like two seconds as A) a snack because I am freezing and B) to use up some leftover rotisserie chicken.

I bought a smoked rotisserie chicken at the store, and that obviously lends a different flavor to the stock you make from it. I tried to think of soup ingredients that would complement that flavor (and that I had on hand). That’s where the red beans came in (also for color).

1 quart chicken stock, made from a smoked chicken carcass

1 cup or so diced smoked chicken meat

1 cup or so chopped mustard greens

1 onion, chopped

1 stalk celery, chopped

red pepper flakes to taste

salt and pepper, to taste

1 can red beans

1 can white beans

1 tbsp olive oil

Heat oil in pan. Sautee onion and celery until soft.

Add stock and bring to a boil. Stir in chicken, greens and beans and simmer for 15 minutes or so.

Adjust seasoning with salt, pepper and red pepper flakes
