Kale Citrus Salad

John actually liked a kale salad I made! Unsurprisingly it was from one of his favorites, Pioneer Woman. My only real change was using half orange, half watermelon because I only had half an orange.


1 bunch Kale, Leaves Torn Off The Stalks
1 whole Jalapeno, Seeded And Sliced Very Thin
3 whole Tangerines Or Clementines (or 1 Orange), Peeled And Cut Into Chunks (or in my case, half orange, half watermelon)
4 ounces goat cheese
1/4 cup Orange Juice
2 Tablespoons Olive Oil
1 clove Garlic, Pressed Or Grated
1 teaspoon Sugar
 Salt To Taste
 Black Pepper To Taste
1 Tablespoon (Sour Cream Or Plain Greek Yogurt

Cut kale into strips. For dressing, combine orange juice, oil, garlic, sugar, salt and pepper in mason jar. Shake to combine. Then add yogurt and combine again. Toss kale in half the dressing. If you need more dressing, add from there (we did not). Add jalapeno, citrus and goat cheese and serve.
