Back on the weight loss wagon. John and I did really well with low carb January two years ago, so we’re hoping to have similar success this time around. I’m already down about 7 pounds from our trip to Ohio (some of that likely water weight), so that’s definitely early progress. I’ll chronicle any new recipes but figured I’d post my weekly meal plans, too, in case others are looking for general ideas.
*Greek-ish salad topped with lamb patties and tzatziki. (pictured above)
*Chili (similar to this one), cheesy broccoli
*Chicken tacos wrapped in lettuce, refried beans, watermelon
*John’s short ribs (he did a basic braise) with mashed cauliflower
*Turkey breast and brussels sprouts marinated in coconut cream and green curry paste (this needs some work), spicy green beans
