Ok, this is admittedly a weird one. But this was my way of making low carb “pizza” for breakfast, and we actually liked it a lot.

4 slices deli ham (make sure it isn’t sliced super thin)

4 tbsp tomato puree or pasta sauce

1 cup mozzarella cheese

16 pieces pepperoni

Layer each ham slice with 1/4 each tomato, cheese and pepperoni. Broil until cheese is melted and browned, and pepperoni and the sides of the ham are a little crispy.

UPDATE: I decided to brown the ham slices for a couple minutes under the broiler before adding toppings to crisp them up a little, and the recipe worked even better!
