Low Carb January Week 4

Negative: We barely cooked this week since we were mostly out of town, so there isn’t really a full week of recipes here.

Positive: We’re continuing Low Carb into February (still need to lose at least 5 pounds before my physical if I can), so there will be more Low Carb meals ahead for you carb-haters.

Monday: Chicken with Chorizo, Black Beans, Jicama

Tuesday: John made fajita-esque flank steak with cheddar melted on it, plus refried beans and sauteed peppers (I had a work event)

Wednesday: Out with Friends

Thursday: Chinese takeout

Friday: Moo Goo Gai Pan 

Saturday: Out of Town

Sunday: Sriracha Chicken Thighs, steamed broccoli, peanuts
