I made steaks for Valentine’s Day (not an unusual move for us). I decided to dress up the porterhouse we shared with some horseradish butter. Super simple, and added a nice zing.
1 stick butter, softened
1 tablespoon horseradish
2 cloves garlic, minced
zest from 1 lemon
salt and pepper, to taste
a bit of chopped herb (I would have preferred parsley but had tarragon on hand for my hollandaise, so I used that for color)
Combine all ingredients together. Top steak with butter. This freezes well.
