Ina’s Tuscan Lemon Chicken

This was a fun and easy grill recipe. Mine took longer but I also forgot to weigh the chicken down (and left out the lemon juice. Whee!).


1 chicken, flattened
Kosher salt
1/3 cup good olive oil
2 teaspoons grated lemon zest (2 lemons)
1/3 cup freshly squeezed lemon juice
1 tablespoon minced garlic (3 cloves)
1 tablespoon minced fresh rosemary leaves
Freshly ground black pepper
1 lemon, halved

Season chicken with salt. Combine the olive oil, lemon zest, lemon juice, garlic, rosemary, and some pepper in a dish. Marinate chicken in marinade for at least 4 hours.

Put gas grill on low. Put chicken on grill and weigh chicken down with a dish, brick or cast iron skillet. Cook about 15 minutes per side (mine took longer). Grill the lemons during last 5 minutes of cooking.
