Recipe Variation: “Hipster Dip” with Chorizo

This was the most popular appetizer at my writer barbecue. The power of Velveeta.


16 oz Velveeta, cubed

1 package Mexican chorizo (six links)

cooking spray

1 large handful Mexican cheese blend (less than a cup)

1 can Rotel

Spray skillet with cooking spray. Crumble chorizo into pan (remove casing) and brown until cooked.

In crock pot, combine cooked chorizo, cheeses and Rotel mixture. Cook on high until it reaches desired milky consistency. Switch to low to keep warm for entertaining.
